Easy Sausage Stroganoff

Easy Sausage Stroganoff – Quick and easy weeknight stroganoff served over cooked egg noodles or your favorite pasta. Your family will love this dish!

Ingredients
- 1 pound Italian sausage
- 1 tablespoon olive oil
- 1/2 stick of butter
- 1 medium onion, chopped
- 2 – 3 cloves of garlic, chopped
- 10 mushrooms, sliced
- 2 tablespoons flour
- 1/4 teaspoon black pepper
- 1/4 cayenne
- 1 can Cream of Chicken Soup
- 1/4 cup water
- 1/2 pound egg noodles
- 1 cup sour cream
- 1/4 cup chopped parsley
- Salt to taste
- Pepper to taste
Instructions
- In a skillet over medium heat, brown the sausage in a little olive oil. Remove and drain and set aside.
- In the same pan, add butter and onion. Cook until translucent. Add garlic and saute for 1 minute. Add mushrooms and cook until softened. Add flour, black pepper, and cayenne. Add Cream of Chicken Soup and water. Stir and simmer for approximately 10 minutes uncovered.
- Boil pasta until al dente. Add sausage back to the skillet and room temperature sour cream. You can add a little flour or cornstarch to the sour cream to keep it from separating. Stir to combine and heat.
- Drain the pasta and add directly to the skillet. Stir to coat. Season with salt and pepper to taste. Top with parsley for color
- Serve and enjoy!
