Jacked Up Caramel Sauce

- 1/2 cup water
- 1 cup sugar
- 1 cup heavy cream
- 2 tablespoons Jack Daniel’s Whiskey
- In a saute pan over high heat, add water. Pour the sugar into the middle. Do not allow it to hit the sides of the pan and do not stir. Using a candy thermometer or Thermapen, bring the syrup up to 300 degrees and it will begin to get a golden color. You have to work fast because when it starts to get color, it can burn quickly. It will become golden between 325 and 350 degrees.
- While the sugar is browning, In a separate sauce pan, bring the heavy cream up to a simmer. When the syrup is a nice golden color, whisk in about 1/4 of the of heavy cream to temper the syrup.. Add the rest and whisk as it thickens. When the syrup is thickened, remove from heat and add the whiskey. Cool to your desired temperature.
