The Art of Mexican Cooking – Diana Kennedy: The classic book on Mexican cooking. Diana Kennedy is an expert on Mexican cuisine. If you would like to learn how to cook Mexican food, Diana Kennedy’s work is the one to study.
My Mexico – Diana Kennedy: In this book, Diana Kennedy gives you a tour of the cuisine of Mexico. This book has both recipes as well as a glimpse of the uniqueness of all the areas in Mexico.
Mexican Kitchen – Rick Bayless: Rick Bayless is the second author that I suggest after Dianna Kennedy. He is an expert on Mexican Cuisine and his books are fantastic.
The Best Mexican Recipes – America’s Test Kitchen: Great basic Mexican cookbook with lots of technique.
Gran Cocina Latina: The Food of South America – Maricel Presilla: This cookbook covers all of Latin America. It gives you a glimpse of the cuisine in each area. This is a great starting point to further research and study of the cuisines of South America.
Peppers of the Americas: The Remarkable Capsicums that Forever Changed the World – Maricel Presilla: If you want to learn about peppers and chiles, this is the book to read. It covers the common as well as unique varieties. It is written by the author of Gran Cocina Latina: The Food of South America.
The Food and Cooking of Argentina: 65 Traditional Recipes from the Heart of South America – Cesar Bartolini: This book is a good basic survey of the cuisine of Argentina.
